The Hinch distillery in County Down, Northern Ireland, was founded by Belfast-born Aaron Flaherty, who can look back on 15 years of experience in the Whiskey industry, including at Bushmills. Flaherty also worked at various Scottish distilleries. County Down in the east of Northern Ireland has always been considered a melting pot of Scottish and Irish culture, so Hinch Whiskey combines Flaherty’s experience in both the Scottish and Irish Whiskey industries.

Double Wood

The 5-Year-Old Double Wood is a premium blend of Single Malt and Single Grain whiskeys with the contemporary twist of Virgin Oak cask aging.

Matured for a minimum of 4 years in the finest first fill bourbon casks followed by a further 1 year in Virgin Oak casks. Hinch 5-Year-Old Double Wood is golden brown in appearance with distinct and intense citrus fruit on the nose, big spice and mocha notes on the palate are matched with a balanced fruit undercurrent.

Imperial Stout Cask finish

THE SPIRIT OF COLLABORATION

Craft & Casks is a limited release of Hinch Whiskey aged in casks that previously held Whitewater Brewery’s Imperial Stout. It’s a delicious experiment carried out in the spirit of collaboration.

At Hinch, we know that time is better spent together. So, being fans of their work, we approached Whitewater Brewery in Castlewellan Co. Down to join forces in flavour.

TASTE TIMESHARE

We passed a number of Hinch casks onto Bernard Slone and his team at Whitewater Brewery. They aged their intense, powerful Imperial Stout in our aromatic whiskey casks for six months.

Once their Hinch Irish Whiskey aged stout was ready to be canned, they returned the casks to us and we filled them with our Small Batch whiskey.
It spent 11 months absorbing the wealth of the Imperial Stout.

This cask timeshare has left Hinch with a crafted whiskey rich in dark chocolate, espresso and caramel tones, a subtle sweetness and the satisfaction of a job well done.

Sherry Cask Finish

A 10 Year Old whiskey from Hinch, which takes its name from the nearby town of Ballynahinch, with the distillery based just south of Belfast in the grounds of the Killaney Estate. 

Our 10 Year Old Sherry Cask Finish is a combination of a minimum 10 year old Single Grain and Single Malt whiskey from a select number of casks within our distillery inventory. Finished for a minimum of 1 year in the finest old Oloroso Sherry casks to add complexity on both the nose and palate.

This Sherry Cask Finish whiskey is light brown with a subtle red hue and has aromas of fresh fruit with earthy garden-fresh notes. Subtle layers of stewed fruit with an unmistakable nutty aftertaste – sophisticated and complex. Bold, innovative, contemporary Irish whiskey proudly made by whiskey lovers for whiskey lovers.

Under soft moonlight, our mermaid comes ashore as a Silkie, at the secluded Silver Strand, on the Donegal Coast. Gently shedding her seal coat, she reveals her human form – a beautiful dark haired maiden with deep, soulful eyes. Dancing along the sand, revelling in the freedom she enjoys in both worlds, she is unaware of the young fisherman captivated by her beauty. She turns, their eyes meet and their love is set. Our Silkie makes her home with her fisherman but the sea restlessly calls to her drawing her back to the water.

The call becomes so strong that she must leave her love and return to the ocean forever.

The Legendary
Silkie

A marvellous smooth, fruity and aromatic Irish blend. Made with a combination of double distilled, triple distilled, peated malt, and grain whiskey. The maturation is also a blend of Bourbon, Sherry and Virgin. 85 % is triple distilled and 35% is from virgin barrels. This blend brings out the best from Ireland. The name comes from old tales of shape-shifting sea creatures that transform into irresistible human-like beings.

The Legendary
Midnight Silkie

The smokiest addition to Sliabh Liag Distillers’ Silkie range of Irish whiskey, named The 

Legendary Midnight Silkie Irish Whiskey! With 35% of the blend triple-distilled peated malt at its heart, it’s a rich, smoky affair, made up of single malts aged in five different cask types: oloroso sherry, bourbon, red wine, virgin oak, and imperial stout casks. A harmony of rich flavours is imparted from the cask medley, with lots of dried fruit, chocolate, citrus, and of course the smoke notes. A rich and smooth Irish Single Malt. 

Non chilled and filtered and natural colour.

The Legendary
Dark Silkie

Sliabh Liag Distillers has shown its smoky side with this Irish blend, dubbed The Legendary Dark Silkie! Taking inspiration from 19th century Donegal whiskey, a triple distilled peated single malt is at the core of this expression, peated to about 22ppm and matured in sherry casks. It’s then blended with a bourbon-matured single malt as well as a grain whiskey having been rested in virgin oak. The result is a fruity, subtly smoky and dry bottling which is sure to convert Irish whiskey lovers to a hint of peat!
